We have been so busy lately, but I am determined not to fall off the healthy food bandwagon.

Here is one of our favorite quick meals.  I have tried making my own dressing and I have purchased dressings at the store. Either way, this meal takes less than 15 minutes, is full of veggies, and is delicious!

Chinese Chop Salad -- Lauren's Latest

I know some people don't think of salads as meals, so I am also thinking you could make this into a pretty great wrap with the right tortilla.  I'll try it out next time -- or if you try it, let me know in the comments! You can also add chicken if you want to make it more substantial.
